A Healthy Vegetarian Lasagna Recipe

Step 1

This step is all about the ingredients. This vegetarian lasagna recipe requires these following things: one fresh eggplant, frozen spinach, lasagna noodles, low-fat cottage cheese, meatless sauce, mozzarella cheese, tomatoes, salt, pepper, and parsley flakes. The healthier cheeses you use in this dish, the better. All the ingredients in this list can be found at your local grocery store.

Step 2

Let's start with the frozen spinach and start defrosting it. Spinach needs to be a little dry so make sure that you get rid of all the water that you can. You can get a little help by using a dry and clean cloth or use some other utensils such as a colander.

Step 3

The eggplant that you bought is whole so you will have to slice it into thin pieces. These pieces should be thin but thick enough that they can be cooked easy. Lay the pieces on a piece of cloth so that you can salt them. Then put another cloth on top of the first one to salt some of the remaining pieces that you might have left.

Step 4

All lasagna, even a vegetarian lasagna recipe like this, is dependent on how it's cooked. For the noodles, place them in a pan and place that pan on top of a cookie sheet that is heated on an oven. This will help evenly distribute the heat and the lasagna noodles will be cooked in about one or two hours or when you find they are tender. To save time, you can work on the spinach and cottage cheese mix and add a little salt and pepper for flavor.

Step 5

Now here's the tricky part in the healthy vegetarian lasagna recipe process. Add sauce into a casserole pan and spread it out evenly. Then add a layer of lasagna noodles, a layer of eggplant, sauce, a layer of cottage cheese, spinach mix, and then another layer of lasagna noodles. Repeat this process until you reach the top of the casserole pan or however thick you want your dish to be.

Step 6

Now for the best part because it's the easiest. To finalize your pasta, add mozzarella cheese, tomato sauce and some tomato slices. Then add parsley flakes for more flavor and color.

After you have prepared all of this, bake the dish at a temperature of 350 degrees and leave it on for about an hour. Once you notice that the eggplant becomes soft and brownish, you can remove it and you can start eating once it's a little cooled. This is an easy and tasty vegetarian lasagna recipe you can cook to satisfy your craving for good and healthy food.
